MSG (monosodium glutamate) is recognised as being an excitotoxin that triggers a huge production of dopamine in the brain that then creates a feeling of well being for the person. Discovered in 1907 by a Japanese chemist,MSG is a chemical that brings out the flavour of other tastes rather than having a taste of its own. For this reason it has been widely used in processed foods that would otherwise taste bland.
